Low Sodium (about 43mg a slice) and SO yummy! We make this for family game night and it is all ways a hit!

Use Ener G baking soda substitute instead of regular baking soda and you get Much lower sodium and you can't even tell that you are missing it. Ener G baking soda substitute is the best secret I have for low sodium baking. Just remember when you use the substitute you want twice as much as regular!

So if you want to use regular baking soda, make sure you ONLY use 3/4 tsp!

Red's Buddha Delight Soup (Low Sodium)

I simply adore this soup. When you use my recipe for low sodium Asian chicken broth, each serving only contains about 70 mg of sodium!! I have gastroparesis, so there are not alot of vegetables in my diet. When the craving gets too much I make a batch of this soup and it satisfies the craving completely.

Top it with a little oyster sauce, and slurp away!

I make a lot of Asian inspired soups. From Egg Drop to Buddha's Delight, this is a great base for any Asian inspired dish! You can use all chicken or all pork. Personally I love half chicken and half pork..

I have found that making my own broth ahead of time and freezing it is three things: SUPER low in sodium, has a depth of flavor that you do not get in market broth, and it is easy!

Making this ahead of time and thawing only when you need it is AWESOME! I freeze it in 2 cup, 4 cup and 6 cup vacuum sealed bags. I just pull out what I need an hour or two before I make it. And the taste will prove that all your work before hand was time more than well spent!!!

I make this broth 2-3 times a month... It never lasts long!
