Made this to use up diced bread crusts from the freezer.
It was a hit for breakfast... served with vanilla yogurt!
Adapted from http://www.healthytippingpoint
.com/pancake-truffles. I changed this a little as the kids don't eat nuts, and I didn't have any pancake mix or almond milk in the house...
Its also sized for 4 servings...
Dairy-free spelt scones from Food and Wine
This could be made with any fresh berry, we like lots of berries so I added more than the 1 cup originally in the recipe.
A no bake cereal/granola bar made with ground flaxseed and peanut butter. This is wheat free...
A yummy peanut butter cookie with bananas and oatmeal.
This is based on the recipe I found here:

But it was WAY to dry to mix into cookies, so I added the mashed bananas. Not a strong banana taste, so if you really want the banana flavour you may wish to add more banana
This is the "Monster Muffin" recipe from the Bosch dealer. They recommend making 6 huge muffins or 12 medium size muffins, I guess since I got 20 from this recipe then I make SMALL muffins.

Modified from the book Secrets of Fat-Free Baking.
I used Total Whole Grain Cereal and used different dried fruits, decreased the amount of sugar, and for the next version I will add applesauce (included below). The recipe from the book didn't have applesauce and was a dry.
A great moist cookie with carob chips, applesauce and oatmeal.
