Delicious! Sometimes I use 1 cup fire roasted tomatoes and 1 cup of regular diced tomatoes for a little kick. Makes 12 1 cup servings.

I am putting in the exact ingredients I used, so be aware that a different tortilla or a different cheese (especially a lower fat cheese) can make a pretty big difference in calories. I adapted it from a cooking light recipe because I couldn't find the lower fat monterey jack cheese and wanted to use high fiber tortillas.

Good for a diabetic or PCOS diet.
The nutritional information is for two tbsp.
Add onions if you like for even more kick, but they're not necessary.
This really is better than the high fat bland chicken salads that I've had in the past.
