Delicious! Sometimes I use 1 cup fire roasted tomatoes and 1 cup of regular diced tomatoes for a little kick. Makes 12 1 cup servings.
I am putting in the exact ingredients I used, so be aware that a different tortilla or a different cheese (especially a lower fat cheese) can make a pretty big difference in calories. I adapted it from a cooking light recipe because I couldn't find the lower fat monterey jack cheese and wanted to use high fiber tortillas.
This really is better than the high fat bland chicken salads that I've had in the past.
A low-fat, low-sugar way to have a great dessert. Use a sugar free cake for even less calories and sugars.
