A tasty way to get your vegetables in! For a hearty, filling soup as a main course, serve over rice.
A hearty chili with lots of protein and fiber.
You can add different kinds of beans, switch turkey for beef, add more or less meat, use chopped/pureed/whole tomatoes, use other seasonings....
A tasty and healthy vegetarian main dish, especially good for the late summer/fall when tomatoes and peppers are at their best. It works just as well without the cheese, if you want to keep the fat down. Serve with a salad on the side for a main meal.
Feel free to substitute vegetables (eg. squash) or different grains (eg. breadcrumbs), add nuts, different cheeses.... This recipe can stand a lot of variation in both contents and proportions.
