Quick prep, plus marinating time, and quick cooking.
The only fat is from the butter - without a LITTLE butter, it doesn't taste right. The beans add protein and fiber.
Two pots required, not a whole lot of prep but a certain amount of maneuvering between the two pots. It's worth it. Low sodium, low fat, vegetarian.
The original of this is in a cookbooks called No Salt No Sugar No Fat. I've changed it a bit - using lowfat sour cream instead of nonfat improves the taste greatly!
