I made this soup with leftovers from the Basil Gnocchi w/ Mushroom Ragu Gnocchi (in my cookbook), and left over grilled chicken. I did my best analyzing the content to get a decent caloric count, but it is not exact. The Gnocchi you can make from the other recipe as well or buy from the store. Prep time will be short if you are using leftovers to make this soup. If not it will be considerably longer, but definately worth it! Cook time is your preference.
This is a very good topping for many many foods, Also as I add more recipies it will be an ingredient in many. You can subsitute parsley for cilantro, make this ahead, and use it for a few days for a very low calorie condiment for fish, burgers, chicken, tacos and fajitas! Enjoy!!!
