This is always a big hit-serve over spring greens with sliced tomatoes...or as a sandwich. We use a high protein whole wheat bread, and add sliced tomatoes and spinach greens instead of lettuce.
I also will substitute a chopped apple for the carrots, and chopped pecans for the almonds.
Tired of the same old taco, I decided to make something with a Mediterranean flair.
We don't eat a lot of fried foods, so taco night is always a special treat!
My son loves nachos, and this is a bit healthier than those we get at Mexican restaurants.
We share these for a yummy appetizer, or for lunch!
Garnish with low-fat or fat free sour cream and avocado.
Marinate 3-eight ounce whole bone-in chicken breasts for an hour or more, then bake for a delicious tangy-sweet flavor.
This recipe was put together when my son wanted apple pie, but I did not have the time to make crust.
