Rhubarb cooks up into fresh, pink or light green sauce with lots of vitamin C. Delicious stirred into yogurt or with ice cream.
I made this after a visit to a local U-Pick blueberry farm. Very good with a little vanilla frozen yogurt. Can be made ahead and keeps well in the refrigerator. From Epicurious.
This a salad I invented and made several times a week when we lived in California. It's especially good with almonds smoked on the grill. If oranges are out of season or you live far from orange country, you can perk it up by letting the sections soak in a bit of orange juice for a while before assembling the salad. For the dressing, orange-infused olive oil is is especially good if you have it.
