This was dinner last night and DH thought it was so delicious that I also packed some for lunch today and froze the rest for a later date. Feel free to make your own base tomato sauce if you like.
A tasty snack, but be sure to stick a small serving because it's high in sodium. You can lower the sodium by using a reduced sodium taco seasoning.
This recipe was adapted from a recipe in Bon Appetit Magazine to be lower fat/calories and for entree sized portions. Feel free to go lighter on the nutmeg and garlic, I just really enjoy those flavors. Make a pan, freeze the leftover portions and microwave for a fast breakfast, lunch or dinner.

A few years back I made Alton Brown's Not Your Mama's Green Bean Casserole. For me, it was a revelation in Thanksgiving cookery. "You mean, you don't HAVE to use chunky globs of Cream-of-Whatever soup?" It turned out fantastic every time, but the nutrition of the dish leaves much to be desired. I submit for your approval a lighter, lower sodium version of Alton Brown's fantastic, delicious green bean casserole.
A note on salt: If you're prone to liking this kind of casserole extra salty, feel free to add more kosher salt in the sauce stage. Just be forewarned that it will make the sodium increase.
