This is what I make when I feel sick and need some quick comfort!
Pure Summer comfort food. A definite treat that goes great with salmon or chicken.
My mother made this dish every Summer so even though it contains both summer squash and zucchini, we always called it Summer Squash. It is wonderful with noodles. Since you drain the tomato juice from the canned tomatoes, the calorie and sodium content will actually be less(unless you add your own salt to taste)
This is a Summer favorite. It's soo refreshing. I like to serve it over a bed of lettuce. It's great as a side but also makes a satisfying entree. A serving is a nice cupful but for a potluck, a serving would be about 1/2 cup(so you'll get about 20 servings)

My kids and their friends are crazy for this salsa. I like to make it and it's easy because I usually have all the ingredients around. The nutritional info does not include the garlic salt--I couldn't find it in the database here.
This tabouli takes the cake for lots of vegetables and a helping of protein too! Prep goes quick with a food processor. Great summer time meal.
