I got this recipe from my CSA, Willey Farms' in Madera, California. They have the best produce on the planet!
This recipe was adaped from Clifford A. Wright's Mediterranean Vegetables and found at TdWilleyFarms.com. This is a wonderfully flavorful dish that can be served as a side or with couscous for a light meal.
This is a nice change from regular cole slaw and makes a nice side dish for pork or chicken. Serving size 1/2 cup = 1 point.
Freeze in 2 drink cups to pull out for a handy meal on the go. Can be microwaved a bit to break the ice then eat like ice cream or use to keep a lunch cooler chilled.
