Recipes I've Shared:
Got tired of the expense and chemicals of Egg Beaters...just altered my recipe to use real eggs. Added a few yolks for flavor and texture. You can add more or less depending on personal preferences.
Our favorite soup. Even the kids love it!
We love Mexican food, so I am always trying to figure out ways to get my Mexican food fix without going over board on my fat and calories.
Thick, rich and delicious!
These bars are small, but surprisingly filling. I found this recipe in a Mayo Clinic cookbook and my kids just gobble them up! Great for a snack or a quick breakfast.
My favorite cold weather food!
So easy to make and so delicious! The original recipe called for coating the dough with butter, but to save fat grams, I omit that.
No "diet" short cuts on this one. This is how my family likes it, so I enjoy with them. I just try to watch my portion size and enjoy it with a low calorie meal.
This is one of my favorites! Makes 2 small smoothies.
My kids love smoothies so I am always trying out new flavor combinations. This one has a pretty strong blueberry taste, so only try if you like blueberries! Makes 2 one cup smoothies.
My kids love smoothies. I do too! It is a great way to get some protein, calcium, fiber and vitamin C all in one fast to eat breakfast. This recipe makes 2 adult size smoothies (about 12 oz each) or 4 kid size smoothies.
This is one of my staple meals. Even the kids like it! Fast and easy to prepare. It reheats very well for left overs too!
I love biscotti in the store, but it is so expensive. Also, I don't care for the texture of store bought biscotti. I prefer a denser cookie. I think biscotti is a personal thing. You need to try various recipes to find the one that is just right for you!
This is the cocoa mix I grew up on except I substituted Splenda baking blend for the sugar. If you find this to be too sweet, just add more cocoa to the mix and then remember to cut back on the Splenda blend the next time you make it. You just need to find the right sugar/cocoa balance for your personal taste.
A light but filling pasta dish. Omit the chicken and serve as 8 side dishes instead of serving as a main dish. The lemon flavor is pretty intense, so don't make this if you don't like lemon.
The recipe I grew up eating, with a few alterations.

My husband ate something similar on a trip to Munich. He searched the internet until he found a recipe that sounded like what he ate. After a few tries and a few alterations, this is what we came up with. Not a low fat meal, but hearty and satifying. Served with mashed potatoes it is a real winner. To accomdate the high fat, just plan out your meals for that day to give balance.
Moist bran muffin with the tart of cranberries and the sweet of streusal topping.
My husband ate this at a friend's home in Vienna, Austria. He wanted me to make it...this is my best attempt!
I got this recipe off of Food Network and made some changes to match our tastes. Mix it up to meet your needs...more or less arugula, add capers, decrease or increase the olives, change the type of olive you use....lots of variations possible.
