A simple carrot soup with a hint of spice, perfect as the centerpiece of a light dinner after too much winter-time indulgence. This recipe makes three servings, and is a great, easy meal for one or two, but you could easily double or triple the recipe to feed more.
I know the ingredients sound weird--but this dessert/snack is out of this world. It satisfies my cravings for something sweet and rich, but it's low fat, high protein, sugar free, and filling. I'm used to having one of those pudding cups and still feeling hungry, but after even a small serving of this pudding I'm satisfied--I don't want to eat anything else.
A treat that's lower in calories than a traditional smore, but very tasty.
A hearty stew that's packed with veggies and is low calorie too.
