This is a simple, delicious recipe for your morning meal.
I love to use Yukon Gold potatoes for this recipe. It really gives this dish a rich flavor. I also like to add a little cayenne pepper for a real kick.
You can use low fat vanilla wafers. I just didn't have any at the time.
This is a great vegetarian dish and is filling. You could use any whole wheat pasta you like. You could also add more spinach.
Great for breakfast, dessert or a snack. Tastes great and is healthy. Kids will love this and not even realize they're eating healthy!
