I sorta made this up using a bunch of different recipes, but it came out great! Also, I used chicken breasts I cooked in the slow cooker with hot sauce, light butter and vinegar. The combination was FAB!
You can also top this rice with some almond sliced for added crunch. It is ready in under 30 minutes.
I love this rice. It's fairly low in calories and is very tasty! The almonds totally make the dish for me!
Alton Brown's recipe. He used it over grilled radicchio. I want to use it on a spinach salad.
