New Mexico Turkey Chili

this is NOT your Texas chili. New Mexico is known for it's spicy chiles and when we ask you "Red or Green?" it has nothing to do with your favorite color or Christmas. Nearly every restaurant serves chile and red or green is a reference to the type of chile you want with your meal. This chile dish is a healthy New Mexican version of a Texas favorite.

Broccoli Cheese and Tuna Soup

Protein Packed and ideal for Bariatric/WLS patients in the mushy stage. I absolutely HATE canned tuna but it's a quick and easy protein filled meat that will help you get in your protein for the day.

Rich and Spicy Butternut Squash soup

Serve with a dollop of sour cream and sprinkle on some cayenne for an extra kick (but don't forget to adjust the calories for the sour cream) I didn't use it when I made it so it's just a suggestion!

Zesty Zucchini Pasta

Saw something on the Biggest Loser about substituting shredded zucchini for half the pasta in a dish. Tried it and I gotta say I love it.

Chicken Reuben Sandwich

This is a much lighter alternative to the traditional corned beef reuben sandwich that I love. I really liked it, I hope you do too!
Compare the nutrition content of this sandwich to a reuben sandwich (as listed on calorie king (770 calories, 38g fat, 52g carbs). I promise you will feel FULL!

Spicy Pasta Primavera

This is my version of pasta primavera...I like tomato so I added tomato sauce to this...feel free to omit it, I opted for it instead of using olive oil like traditional recipes call for. Feel free to add the veggies of your choice...these are what I had on hand and used when I whipped this up for lunch

Quick Breakfast Sammy for One

I live alone so most of my recipes are tailored for one person. It would obviously be easy enough to multiply this for add'l servings as needed. It's quick, easy and has a nice helping of fiber and protein to keep you feeling full!

Macaron con carne (beefaroni)

This is essentially a beefaroni dish that I always had growing up. Without beef it's just called macaron. Made with spaghetti noodles instead we called it Fideo.

Diabetic Friendly French Toast

This is a diabetic friendly version of traditional french toast made with Sara Lee Delightful wheat bread. It has 90 calories for two slices of bread and only 9 grams of carbs per slice! The rest of the carbs in this recipe mainly come from the sugar free pancake syrup. A serving is 1/4 of a cup which for me is a bit much...I can easily do with just 2 tablespoons (half) of syrup which will shave another 6 grams of carbs off the total for this recipe.

Diabetic Friendly Mediterranean Chicken

This is a meal for two but of very small portions because I am diabetic and cannot handle too many carbs. It's incredibly flavorful and is actually quite filling because of the amount of fiber in this dish. It is purposely made with a small amount of pasta because I can easily go over my carbs for a meal by eating too much pasta.

Low carb, low cal and delightfully flavorful!

Diabetic Friendly Green Chile Stew

This recipe will easily serve 8 people but it's so low in carbs and calories you can just as easily have two servings and serve 4 folks!

Chicken Salad Sandwich

As a type two diabetic it's hard to find a filling sandwich that doesn't send my blood glucose level through the roof. I made this on a whim one evening and it really hit the spot. If you aren't watching your carbs you could add a handful of cranberries or some sliced grapes and walnuts to make this even tastier! This makes a great meal for the whole family or for a picnic or brunch meal.

Diabetic Friendly Chocolate Smoothy

I'm a type II diabetic and I love chocolate. I also have developed a sensitivity to the casein in milk so when I discovered Almond Breeze almond milk I was overjoyed! I really hate the taste of soy and rice milks and because of the diabetes I have to watch my carbs...soy and rice milk have the same amount of carbs per glass as a regular glass of milk...almond milk has less than half and the unsweetened varieties have only 2 grams of carbs per serving!! I made this with the unsweetened kind but you can always sweeten it up with some splenda or stevia or if you aren't watching your carbs you could use the sweetened chocolate almond milk or just increase the amount of banana used.
