Replace speghetti with speghetti squash. You won't believe how tasty it is and the healthy substitution will have you making it over and over again as you strive to reach your weight goals! A secret is you might choose to top this dish with feta cheese one time (1/2 cup) and walnuts or sunflower kernels the next. If you've got a few extra calories to work with, add all three for variations on the below dish.
This is low calorie, less than 75 calories. It looks good, tastes great and is a light complement to any dinner.
Talk about delicious. This is a quick, nutritious and impressive dinner. Serve this dish with a green salad, some fresh fruit, or "Meringue Pears" recipe from my cookbook, "Fit"full Desserts. Add cups of steaming tea and you have a wonderful meal!
This takes french toast to the next level. A disastrous french toast morning made for my son's friends left me wondering if there was a better way. Needless to say my son never brought his friends for breakfast again. Since then, this french toast casserole is absolutely delicious and loved by all. It is great for days when the kids have off from school and doesn't require any last-minute preparations. Arrange the eggs, milk and flavorings the night before so the flavors have time to soak into the dry bread cubes. Delicious! Wish I would have had this recipe back then!
My husband loves things like crisps, upside down cakes and bars. So I try to make sure they are not only made with love, but also healthfully. I've revised this apple crips recipe to be a healthy alternative with a generous portion size for guiltless enjoyment.
Few of us have time to make one meal, let alone three. Here is a quick, easy and efficient way to make three meals out of one. Nutritional calculations are for all ingredients for all three meals. This is a grab and cook meal!
The sister recipe to this is "Low Fat Honey Cream Cheese Frostning." It is found in my "Fit"full Desserts cookbook. Both of these frostings are also ok for your canine companion to put on homemade doggie treats. Absolutely low cal and delicious.
Recently I experimented with and used two treat tasting frosting recipes - Honey Cream Cheese Frosting and Carob Powder Cream Cheese Frosting. The Carob is included in my "Fit"full Desserts cookbook.
From the Garrod side of the family, a dessert favorite. Took calorie, fat, sodium counts down as much as possible.
Whidbey Island is in Puget Sound about 35 miles north of Seattle. Pacific Northwest fare is similar, but here is a traditional island dish sure to keep your weight in check and your tastebuds asking for more. Serve with a Riesling wine.
My daughter loves to cook and so when inspiration hits her, she prepares fantastic candies for the holidays. Here is one of her recipes. Pop one of these into your mouth for decadent flavor to satisfy your sweet tooth without ruining your diet.
Add a cold day and a hot soup and you have a winner. This recipe is from the Garrod side, a little bit Scottish, a little bit Irish. Enjoy!
This is an amazingly delicious family recipe we had at almost every summer barbeque, picnic, reunion or shower. You couldn't go wrong bringing this dish to pass and it never lasted long.
This was another favorite, easy to make, recipe for quick family lunches. Time was important in our always busy and on-the-go family. Makes 12 delicious open-faced, toasted snacks, or lunches.
Naturally nutritional and low in calories, a favorite of the adults in our family!
For a tasty snack, spread this mixture on fruit wedges.
This recipe was not only popular choice for a snack sandwich, but also great on a bagel or English Muffin. For reduced calorie purposes this recipe is on an English Muffin half, with reduced calorie cream cheese, unsalted nuts.
Peanut butter and jelly sandwiches were a favorite in our household, not just with the kids, but the adults as well. My husband would have his with tomato soup. This sandwich filling recipe is a twist on an old favorite.
Cheese adds zip to this family stand-by for after school snacks. A tradition for adults and kids. Quick and easy and can be made ahead, also a great lunchbox treat.
When you have kids or grandkids, you need variety and sandwich fillings like this are just what I used. My kids loved this one.
This recipe makes six loaves so you can stock up and have homemade bread for your family. I made a lot of homemade bread when my kids were growing up, and they helped. It is one of the items they "ask" me to make when I visit. You can freeze this bread and warm in toaster oven, microwave or regular oven. The secret to this recipe is to have EVERYTHING from the bowl to the towel "cozy warm". This packages up great for food gifts or parties.
There was one Midwestern friend who was a great cook. She shared many of her recipes with me and I worked them into our family dinners. This one has the great eclair taste, but in a torte so you can manage your serving size.
This is one of those recipes you had a friend write out for you at a shower, or party or get together. It crosses generations and is a great addition to any table or family gathering.
Our good Midwestern friends served up these rolls when we visited. The smell of the rolls baking are enough to make great memories. Needless to say, I had to have the recipe to use for my own family.
A great way to get kids to eat their vegetables, especially broccoli which has a stronger taste. Adults will love this as well and it was a standard recipe served to our kids as they were growing up. It is simple and quick and a great side dish for busy working parents.
This recipe uses a "Jiffy" brand yellow cake mix , but whle not sure where I got this particular recipe (I think a friend), it became a wonderful treat everyone loved. It contains milk and so is a great dair y dessert if you have children.
My husband's mother worked for 25 years in an upscaled restaurant that served all types of bar drinks. This recipe is one of those.
I loved making homemade breads of all types when raising my kids. This one was a favorite and can be stuffed with anything you can creatively think up. Great fun for kids and adults alike.
This recipe was a great hit with our kids as they were growing up. It was also fast and easy to fix in an evening OR to have simmering in a crockpot. Also great for parties. Fabulous as leftovers.
A Garrod family staple. It was easy to make with ingredients one might always have on hand. Here is the less fat, less calorie version. I use turkey bacon in this recipe, but you can use regular bacon. Mom Garrod would turn in her grave if she knew I was using turkey bacon.
Wake up to the smell of "fresh" bagels right in your own home. This delicious recipe has been a family standard for years. Basically, because I love making breads of any kind.
This recipe is great for guests and actually comes for friends in Wisconsin. This was one of my favorite dishes when we got together at their house, and of course, I had to have the recipe!!! Use low sodium products, and lean meats, low fat cheese to reduce calories, sodium.
My husband's sister made this cake a tradition in her extended family. She would bring it to special occassions when the whole family would get together. It is moist, delicious and worth the effort. You'll wow your family and guests.
The Garrod family had this dish frequently. While Mom Garrod has passed on, her recipe lives on in her handwriting and when we make it, we are definitely thinking of her. It is a simple, healthy recipe and easy to make if time is a concern.
