I always make this soup when I start a diet. I believe it is an old Weight Watchers recipe. It is quick to make and very filling. I always make a double batch. I like to keep it on hand for snacks and for those times when I need to feel extra full.
This dish makes a huge bowl, enough to serve for several meals as a side dish or a main dish. Can add cooked salad shrimp or diced, cooked chicken breast if desired.
