This dish is similar to eggplant parmesan, but is baked instead of fried. I use a chunky spaghetti sauce to add extra veggies to the mix. I also like to serve it over couscous. It is higher calorie than some of the options on here, but is well-worth it in nutritional value
Spark had a "featured" recipe today for Broccoli and Cheese soup. I'm a vegetarian, and theirs contained chicken broth. I searched and couldn't find a good vegetarian option on Spark, so decided to share mine.
Steaming couscous with a can of chopped tomatoes adds flavor and color without any extra work. You could also stir in some edamme or sauted tofu for an extra protien burst.
Quick and easy to make - yet unique. This special southern style tradition is an excellent way to add a little bit of extra fiber along with a huge burst of flavor!

This dish is a nutritional powerhouse - SHHH!! Just don't tell the kids. Lightly toasting the pasta gives it a slightly nutty flavor. The sauce is slightly spicy - a true hit all the way around. It's also easy and fast!
