A healthier way to get your enchiladas on - you can add any sort of veggies you'd like!
Ground beef, 2 potatoes, half an onion, beef broth, and any veggies you have in the freezer!
Can be used as a side dish or throw some protein and possibly some noodles/rice in and you have a full meal!
We used to purchase the bagged stew, and the store stopped carrying it! As it was one of our go-to meals, we had to learn how to make it. You could easily use less potatoes and throw in more veggies to lower the calorie count.
I was craving frozen yogurt and this totally satisfied - while getting a serving of fruit, and a decent amount of fiber and protein per serving!
This is a great variation on a cold pasta salad if you want something a little spicier.
I love suddenly salad, but it's so high in calories! This is my answer to it - using high fiber pasta, fat free dressing, and lots of veggies!
Throw this together real quick at lunch time and it will be ready for dinner! Serve this with a salad on the side or just add more frozen veggies if you want to reduce the calories/increase the size per serving. This recipe is NOT for anyone watching their sodium as is- but you can make modifications to make it better (plain black beans, and plain frozen veggies would knock the sodium down a lot a ton, if I would have put it in first I would have done that, oops!).
This was a GREAT lunch today. I went ahead and used the full fat and non-diet versions of everything but you can remove about 250 calories if you use light bread, light salami, fat free italian, and fat free cheese.
This is a GREAT sandwich for a summer day or on a day you're craving something sweet but healthy. Takes about 2 minutes to make and is super filling.
