You could use any vegetables you have on hand. This is based on Mark Bittman's frittata recipe from "Food Matters," but I added some imitation crab because I had some in the fridge.

this, but with broccoli instead of greens:
a la Chipotle
basic honey-mustard dressing, not too sweet
You can use this for a pizza crust, a flatbread, or individual rolls--you can reduce the olive oil for a more bready, less flaky texture.
