Heat olive oil in a skillet, add garlic and saute till golden. Add onions and carrots and saute till wilted. Add peppers and saute till wilted. Add stewed, sauce, and paste tomatoes and bring to a boil. Reduce heat and let simmer for 30 minutes. Cook pasta according to direction on box. Spoon tomato mixture on top of pasta.
Saute, boil, simmer.

All of these recipes are vegetarian and a good amount of them are vegan. I am a member of a CSA so I'm always looking for recipes to use up all of the vegetables and fruit for the week. I look through all my books and on-line and use what recipes I find as suggestions then go from there.
