I was having hard time getting my kids to eat much fresh fruit. By mixing these together with one carton of vanilla (or any flavor) fat free yogurt, they loved it. Seemed more like dessert. Could be served with a slice of angelfood cake or a muffin for breakfast. Use any fruit you have on hand, even toss in some chopped walnuts, raisins, just adjust the calories and fat if you add nuts.
The condensed milk adds a touch of sweetness so that you don't need syrup. Leftovers go in the freezer for a quick breakfast on the run or a snack. Can top with fruit or peanut butter.
This is great as a side dish, with tortilla chips, over greens or as a topping on chicken or fish. Great way to use up leftover ears of corn or an explosion of home grown tomatoes.

This is a veggie/vegan burrito. The original recipe called for using a whole pound of vegan cheese, but i cut that in half. if you use more than 1/4 cup of cheese on each burrito, then you will need to adjust for the calories. With using the whole pound of cheese, each burrito would be about 601 calories.
This dish, using egg beaters and veggie sausage, mixed with bright red peppers and green spinach, looks as wonderful as it tastes.
This is wonderful, made with lime juice and no oil. Served with baked tortilla chips or on burgers or on a bed of greens.
This recipe works well with any leftovers, such as chicken, steak or without meat for veggie lovers.
This is from the cookbook, Skinny Bitch in the Kitch. It is higher in calories per serving but so delish! Very satisfying to even the biggest meat eaters in the family. You can use the pre-cooked polenta or make your own. Use vegatable stock when making polenta from scratch.
