Don't let the name fool you this is a very simple yet healthy recipe that is pretty good. It is great for those of us watching our sugar and dairy intake. The key is the banana, the riper the better, so don't throw away those nearly black bananas, make some oatmeal!
This stew is so easy and can be served alone or over rice. Garnish with chopped cilantro and diced tomato for an added zip! Veggies can be sauteed in a bit of oil for added flavor!
This is a take on the classic puerto rican rice with tons of flavor and it is super filling! Can be a side dish or double the serving and make it a meal!
