delicious, earthy veggie soup I wanted to create after having a fancy restaurant version. Mine isn't quite as good as that one. :) But it's pretty good!
Got this recipe from kraftfoods.com. Makes a great side dish, it's pretty enough to bring to holidays or parties, but super simple enough for a weeknight. Also, I've started adding chicken and sometimes rice to make it a one pot casserole.
I know this isn't the healthiest dish ever, but I wanted to put it in the database for my own nutritional info because I make it for my friends and family all the time. And I wish I could tell you how much a serving is.. but I use the same casserole dish every time, and just cut 8 equal squares out of it!
I work in a restaurant, and this is my favorite salad! Wanted to put it in here for others to try and love as much as I do. There is a decent amount of prep work involved, but it seriously creates so much salad! I like to toast up some multigrain flatbread, layer some hummus, some of the rice nut salad, and sprinkle some feta cheese on top if I have it. Super delicious, super filing, and so good for you! Makes six large servings, if using with hummus and/or flatbread. By itself, maybe 4 large servings, about 332 calories each (mostly from the walnuts too).
There are a million recipes similar to this, but I figure I might as well share this because it was so easy and yummy, I wanted to write it down so I could make it again and again!
Unfortunately, I made this late at night so cooking times are just approximate! As for serving size, I used a square casserole dish and made one horizontal and one vertical cut. I think you could easily make 5 servings out of this if paired with an extra side of veggies or salad which would cut the calories down to 340 per serving.
Upon finishing the dish, I would have added more spice. I added hot sauce while eating, which helped a lot. I think adding corn to the chicken mixture would be nice too.
I had one serving of my veggie chili left, but was craving mac and cheese. Decided to put them together - sooo good!
A slightly healthier variation of a dish featured on her talk show! Super simple to make and variable ingredients make it a winner.

I'm hoping to cull together recipes from every outlet that I collect from into this one cookbook. I love looking at kraftfoods.com to get recipes, and eventually when I start cooking more, I'll try out some of the fantastic ones from the Food Network as well.
