Spray cooking grates with no-stick cooking spray. Prepare grill for medium direct heat cooking.
Combine black beans, corn, tomatoes, green onions, cilantro and garlic in large bowl. Pour lime juice and olive oil into bowl; stir to blend. Refrigerate, covered, until ready to serve.
Sprinkle seasoning blend on both sides of filets.
Cook filets 5 to 7 minutes per side or until meat is no longer pink, turning two to three times for even cooking and browning. Serve with black bean salsa.
1 Rinse the quinoa thoroughly and drain.
In a medium-size saucepan, bring the stock to a boil, stir in the quinoa, and return to a boil.
Lower the heat and simmer, covered, for 20 to 25 minutes or until all of the liquid has been absorbed.
Let stand for 5 minutes, then transfer to a bowl and stir in the onion, red pepper, cucumber, and herbs.
2 In a small bowl, combine the orange juice, vinegar, orange rind, salt, and black pepper and whisk in the oil.
Pour this dressing over the quinoa and vegetables and toss well.
These are an absolute hit at any BBQ. These little treats are great as they are low in calories and satisfy your craving for something sinful without being bad. They are easy to prepare and they look amazing. I made these for the girls at the office once and they still talk about them.
This chili has a very distinctive taste using the chipotle chili. The longer this stews the better it is. Freeze's great. It's the only type of chili powder that my family will let me use anymore.

This is a nice meatless recipe that is a real crowd pleaser. This is great for a large group and easy to make ahead. Freezes very well, if there is any leftover. If you are enjoying a glass of red wine while you are preparing this dish and you happen to splash a little in the sauce, it's even better.
Even if you aren't a fan of tuna you will like this. When I first said I was making Tuna Pie for dinner the faces all turned a little sour but now they are all smiles. Similar to a quiche but the shell is rice instead of pastry.
