Slight variation in recipe, I used applesauce instead of oil.
This is a slight variation of the cookies from the book. I used applesauce instead of oil and didn't add nuts.I also used half regular and half brown sugar instead of all white. Next time i will probably use whole wheat flower as well. They are quick!
To make a lower fat version, I sometimes substitute soymilk for the 1/4 cup oil.
Sort of an enchilada/tortilla casserole- a mixture of an old family recipe, veganized.
Vegetable pot pie recipe-- I use vegan sausage in it because I like the flavor, but you could easily use seitan or other faux meat or delete it all together.
