Tomatoes and Feta

This is a Greek dish often served as a side at any meal. Bulgarian Feta is the best if you can find it. Try a good middle eastern store and you'll be in luck. I always soak the feta (prior to 'chunking') for a good hour, change the water and soak again for about another half hour. This will reduce the sodium content considerably without altering the flavor although the reduction isn't shown in the nurtitional breakdown. Sorry.
