vegan cheese lasagna. this is adapted from about.com's dairy free lasagna. you can add a third block of tofu if you want a more hearty dish just up the honey, cider and salt by a 1/2 teaspoon or to taste. serve with a veg and or a salad.

can adjust the spices to taste can also use pumpkin pie spice instead to the cinnamon and nutmeg.

based on Rachael Ray's that was aired today adding more veg and protein with the beans. you can reduce the salt level by making the soup with half water half stalk

backed apple with raisins and cranberries

quick and easy snack/dessert. made in the microwave in under 5 min. a fall favorite
you may need to adjust the calories depending how large your apple is.

broccoli raab with mushrooms, pine nuts and olives

can be a side or accompany pasta. use short pasta like zitti. the broccoli raab is a bit bitter so you need to blanch it then saute it with everything else.

this is adapted form cooking light using soy milk for 2% milk and omitting the raisins and bourbon.

mix masa herbs, salt, pepper, and baking powder.
add water and using a mixer mix till blended. add additional water one table spoon at a time until cake batter consistency. add oil and increase speed to medium and mix for 4 min. divide batter in 2. in a greased 8x8 pan spread half the batter on the bottom. spread the chicken in the middle. carefully spread the remainder of the batter on top.
