a very delicious low fat high fibre recipe. Served over a bed of brown rice. Sprinkle with chopped cilantro and a dollop of sour cream.
a hearty, filling breakfast! Additional veggies, such as green onion, olives, mushrooms, green peppers are great as well! Easy to make, and very short prep.
I like to spice mine up-did not include additional seasonings such as chilies, salt and pepper or hot sauce. These are additional (optional)

These are really great muffins. You can make in regular sized muffin tins, or try the small muffin cups for a little snack. If you do reduce the portion size, they become a snack sized treat for 76 calories each.

a wonderful, aromatic, Mexican dish. Serve with low fat sour cream, salsa , chopped cilantro and a big green salad on the side.
This is a nice, filling salad. It's great to put a bit on a low fat cracker.
This is great over brown rice. I make double and freeze it for lunches or another dinner meal.
