Based on recipe of same name in the American Heart Association Low-Calorie Cookbook. The main thing I changed was using fennel bulb instead of celeriac or celery.
Not too much dough here, just lots of sweet and tart fruit. The dough is sticky. (from Recipe Zaar, with my adjustments)
I'm not sure where I found this, but after a quick Google search, Ifound that it originated with Sunset Magazine. Original recipe called for 12 tortillas, but the only package I could find had 10, and was plenty to cover. I also used onion powder instead of raw onion. I blended yogurt mixture with my hand blender. Cooking times were right on.
I made this up after reading a Cooking Light recipe for oven fried chicken dipped in a mixture of buttermilk and cajun seasoning, then dredged in panko. You could probably use green curry, too. Also, my directions are for oven fried, but you can also pan fry. I tried the CL recipe first with pork chops, so that could work well here, too, even salmon.
