I took a basic muffin mix and amped it up with some protein and a fun crumb topping. These aren't the healthiest but they certainly pack some fiber and a bit of protein.
If your into experimenting I'd love to hear how you are able to cut the calories. I will try this with apple sauce instead of oil soon to greatly reduce the fat.

I saw this recipe on a TV show on TLC and thought it would be divine. I altered it to be a bit better for you (i.e. reduced butter). You can make it with or without the cajun seasonings and it will still be full of flavor from the butter and other seasonings.
This dessert is surprisingly easy and quick but tastes great.
Reduce calories by using a reduced fat peanut butter, sugar free pudding and fat free milk. I will next time; this is just what I had on hand this time.

Easy, Quick Pudding Pie. I used 1 box Sugar Free pudding and 1 box regular but you could reduce calories (about 25 per serving) by using two boxes of sugar free pudding.

Jello Poke Cake made with Raspberry Jello and topped with Cool Whip Lite. Cake is made with 1/3 cup apple sauce instead of oil and uses 3 egg whites.
This is a recipie from Pillsbury.com. I used a few lighter ingredients and made it in my pancake maker instead of making tiny ones.
