This recipe is based on Autumn Harvest Soup from Fitness magazine, with a few modifications.
This is my fiancee's secret recipe for tofu-tacos, made with Morningstar Farms Grillers Crumbles instead of meat.
The cheese & avocado are optional if you want to cut calories even more!
Yummy stuffed bell peppers - one is great for dinner (with a side of extra veggies or bread if you need more food).
This makes an awesome sorbet using a Vita Mix, or can be made into a smoothie by adding additional liquid (water or OJ).
This is my first attempt to mimic the amazing boiled tofu soup at Tofu House in San Diego. The flavors aren't quite right, but it was still yummy and filling.
These are amazingly good oatmeal cookies. Replacing the chocolate chips with dried fruit would make them healthier, and eliminating the walnuts would decrease the fat content, but I calculated it for how I made them.
This is a very yummy orange-flavored sauce for cornish game hens or other poultry. It also makes broccoli taste great!

A very veggie-rich pasta dish - either 4 side-servings or 2 main dish servings. Most of the fat is the good kind from olive oil.
As yummy as the yogurt parfait at Starbucks, but fewer calories! A healthy treat.
