Ginger Pork Potsticker Bowls

This recipe is delicious ! & modified from The 1500-Calorie-A-Day Cookbook by Nancy Hughes published by McGraw-Hill 2009, page 142, Fresh Ginger-Pork Potsticker Bowls. We doubled the pork in the recipe, increased the wontons, grated the carrot (instead of chopping matchsticks), & used ground ginger instead of fresh grated. (We left out dried pepper flakes which were optional.) We used 'full' sodium chicken broth then diluted it with water, then used less soy sauce & green onion for a lighter broth altogether.

Banana Almond Muffins

I modified the Banana Bread recipe from the Better Homes & Gardens, New Dieter's Cookbook, Meredith Books, 1992 , page 377, by substituting splenda granulated for baking instead of sugar, added ground almonds on top & put the mix into 12 muffin tins for easy serving.

This is a GREAT recipe from Better Homes & Gardens New Dieter's Cook Book, Meredith Books, 1st Ed. ,1992, page 291. We cooked it in the oven instead of the micro, & added 1/8 tsp. of ginger. Yummm!

This is a recipe from Better Homes & Gardens, New Dieter's Cookbook, Meredith Books, 1st ed. 1992, page 151. I modified it by using 2 servings of egg whites in lieu of 2 of the 6 eggs required, used real cheddar cheese and omitted all types of pepper.

Poached Chicken Breasts with Apple

This is a recipe from the Better Homes & Gardens New Dieter's Cook Book, Meredith Books, 1st Ed. 1992, page 175. I increased the chicken to 16 oz. for 4 persons (4 oz each) when calculating this recipe & left out a dash of pepper.

This is a modified Better Homes & gardens New Dieter's Cook Book recipe, Meredith Books, 1st ed. 1992, page 111. I use ground turkey instead of beef and leave out the green pepper. As the original recipe does, so do I recommend adding a BBQ or sweet n sour sauce as a topping to give this entree a little zing!

This is a Better Homes & Gardens New Dieter's Cook Book, Meredith, 1st Ed., 1992, recipe on page 136. I modified the recipe here. I used 2 slices of a thin light multi-grain bread that have a total of 70 calories for both pieces, so I added a 1/4 c. more applesauce

Skillet Sweet Potatoes

this is a Better Homes & Gardens New Dieter's Cook Book, 1st ed. 1992, Meredith Books, (page 63) recipe. My husband cheated & pre-cooked the raw sweet potato in the microwave first to cut out the 20 minute boil. This has a fairly strong orange flavor so leaving out the orange peel may be a good idea.
