Okay, it's not really a pilaf...but it's still delish. This is an "I need to clean out my fridge" kind of meal. I love serving this with Vegan Parmesan over the top. You can increase or decrease the seasonings any way that you like.
One word: YUM.
This is SOOOOO good!! I made it for our omnivore friends, and they had NO idea that it was vegan! :) I serve it with vegan sour cream on the side.
My hubby is in love with the chicken version of this, so I figured, why not make it vegan?! He couldn't tell the difference :)
I absolutely love this medly of veggies, especially served over some pan-fried polenta. It really lets the flavors shine through.
Even my hubby loves this recipe. I try to keep it on hand for quick lunches and easy dinners. It's great on toasted bread with soy cheese and a big tomato slice.

I use this for nachos, taco salad, tacos, dip...you name it!
I made this because my hubby wanted spaghetti with meat sauce, and I don't eat meat. A ragout-type sauce sounded better, especially with all the extra veggies. Enjoy!!
This recipe is from the AWESOME cookbook, La Dolce Vegan. It's AWESOME with a HUGE side salad and some Tofutti Better Than Sour Cream!! To reduce the heat, reduce the amount of peppers you put in.
