Curried Chicken Shirataki Noodle Pot

This meal combines chicken curry with the deliciousness of noodles. Rinse the Shirataki noodles thoroughly before using and squeeze out the excess water. I use the Angel Hair kind. Also, I think the noodles have a better texture when allowed to simmer with the sauce for a few minutes.

Date & Chocolate Protein Bars

These turned out very tasty, but a little high in carbs. Makes 16 decent sized bars.

White Bean and Turkey Stew

This is a creamy and satisfying stew. So easy to make, it comes together in about 20 min. Serves 4.

This recipe makes 2 burritos. I find the soy-chorizo with the tofu products or with the sausage at the grocery store. It has all the flavor of chorizo, but it is not greasy.

I love this recipe because it reminds me of fall. It is so good as a side dish or even by itself. The combination of sugar, nuts, and fruit caramelizes and the squash becomes tender and absorbs all the flavors of the dish. This is easy to make, so try it!
