Quick supper decision that could be better calories with the lower fat ingredients. Still, 1 enchilada = 385 calories, not bad.
I love this chicken salad. I'm putting it into my recipes in its original form, but I'm also going to work on the light version.
Giant Eagle Sweet Italian Sausage, 32 oz - loose
banana pepper, raw 4.5" long, 25 serving, tops cut off & emptied
Ragu Pasta Sauce original - 1 jar
Guggisberg Amish Butter Cheese, 6 oz - cubed
Parmesan Cheese, grated, .25 cup
I wanted a lighter version of my homemade vegetable soup, something hearty and full of flavor, but light on fat and calories. I exchanged the chuck roast for some chunks of veal and loaded up the veggies. Everyone loved it and it really hit the spot.
I love the traditional, sour cream laden, chicken paprikash recipe with the wonderful heavy dumplings, but...the scale doesn't love it. So I altered the recipe to have the taste without the calories.
Flavors reminded us of turkey sausage. The burgers were moist, flavorful and made a great sandwich.
We loved this. It was tender, juicy and the simple sauce was strong enough that you only needed a little bit. I served this with baked potatoes, sauteed mushrooms, limas and salads. No one even touched the potatoes.
Rich, full asparagus flavored soup that can be made light. Soup can be served hot or cold.
Very filling and satisfying arborio rice dish. A little goes a long way, so you could cut the recipe in half. This sure doesn't taste like diet food, but a nice 118 calorie count!
One of my family's favorite things, lightened up. I scoop out the potatoes and serve in the skins, but I read a recipe posted by someone else who puts measured amounts into a muffin tin - good idea - if you don't care for the skins.
Delicious as side or even as dessert, healthy & yummy! Loaded with potassium & Vitamin A, try it!
Trying to make comfort food healthy is not all that easy! However, this felt comforting and tasted good. It also didn't leave me feeling like I blew my healthy eating.
This is my light version of Olive Garden's Zuppa Tuscana or an Italian Peasant Soup. I've used turkey broth just because it's what I had on hand, but next time, I'll use chicken broth.
This recipe is from Healthy Bread in Five Minutes a Day. I was excited to know I could control the ingredients in my bread. I used my food processor and it really pushed the limits for volume. Next time, I will mix with my stand mixer and dough hook. I was always intimidated by bread making and this is a fantastic way to do it.
I made these and we tried them warm. Felt terrific having a baked goodie.
