An easy version of chicken enchiladas. It could be made lower fat and lower sodium by using low fat cheese and/or low sodium tomato sauce, but I used the ingredients I had on hand. You could also cut the calories by using only 12 tortillas.
This cooks in the crockpot all day and tastes and smells delicious. It has lots of fresh veggies too.
