This is a very different smelling and tasting way to cook chicken stew in a crock pot. I use frozen chicken thighs and then they cook perfectly for 8-10 hours
Found this in "Clean Eating Magazine. Smells delicious as you cook it. You can use whole grain tortilla's or buns for the meat, or put it in a salad instead of lettuce wraps.
Thai spring rolls made with lean pork loin. These are excellent for taking to lunch. It's great for leftover pork chops as well.
This is my favorite quick breakfast! Kefir is somewhat like liquid yogurt. It's high in protein and a good source of healthy bacteria and 99% Lactose Free.
These look like little mushroom cap pizzas. I like to use fresh buffalo mozzarella when it's available, but slice it thin. It's a great snack or light lunch or dinner.
this is an excellent dessert from the primal palate blog. Great for when one needs chocolate! It's also low in sugar and dairy free.
Something I came up with to use up some ground elk I'd been given as a gift. It's sort of like chili
for those who are gluten intolerant or following a grain free diet, this works well as a simple breakfast or dessert
I make a batch of these at the beginning of the week and then I always have a quick, healthy breakfast ready to go in the morning.
this is a delicious salad that's great in lettuce wraps if you are watching carbs, OR will work on bread.
I've made this on the stove or in the crockpot with adjusted cooking times. Both are delicious
This is from the "French Women Don't Get Fat" cookbook and incredibly useful. I will make this for dinner with steamed veggies, and slice up the leftovers for a salad lunch the next day
this is a delicious light lunch or first course for a dinner party that I got from epicurious. I prefer balsamic vinegar to red wine vinegar in the original recipe however you're welcome to try it. I also used the clementines because they are easy to peel and segment. This is very good for sweet/salty/sour cravings.
This keeps me full all morning for breakfast and tastes delicious
This is tasty and a great source of vegetarian protein and fiber. I like to add extra lemon juice. Good with warm Pita on the side.
these are great to take for lunch (just double the serving) or to serve as summer appetizers. You can add pepper flakes for a little more kick to the sauce
This is a really great winter soup with almost a full day's serving of vitamin C
This evolved as a dish that used up several vegetables in the fridge. Use anything that you happen to have on hand.
this makes a nice brunch entree with a salad of spinach and spring greens
