This can be made vegan by omitting the beef/cheese. This is a great recipe to make for a mixed family of meat/non-meat eaters. I'll make a batch of these and make half of them meat free and add meat to the other half for the rest of the family. :)

This reminds me of McCallister's chicken tortilla soup and is something I threw together out of things I had in my pantry one day when I was low on groceries. It's high on sodium, you can substitute fresh ingredients to improve the sodium content, this is just what I had on hand. It was really cheap to make, even garnished with sour cream and corn chips, it cost less than ten dollars to make!
