z sweet is a natural zero calorie sweetener. you could probably use brown sugar in an equal volume if you prefer.
i used chef meg's pumpkin smoothie recipe as the base for this. i've tweaked it a bit to suit my needs a little better--more protein, less refined sugar. it's still pretty carby, so might not be the best choice for some, but all the sugar is from whole fruit or stevia. i think it's pretty tasty, and it's got mad vitamins and nutrients. it's also very filling! it can be made the night before and refrigerated for a quick breakfast shake.

this is my (very slightly) adapted version of clean eating magazine's recipe of the same name. the original can be found at http://www.cleaneatingmag.com/

to-Bake.aspx.
the only changes i made were to use two small fennel bulbs instead of one medium (all that was available to me at the time), two large potatoes instead of medium to make up the volume difference, and 1/4 cup sour cream instead of 1/3, to make it easier to divide into individual servings for lunches. instead of alternating potato and fennel when putting the dish together, i used two potato slices for each fennel layer. it made a great side dish.
