I found this recipe on Williams-Sonoma (http://blog.williams-sonoma.c
oups/) and made minor adjustments to fit my taste and needs (GF and Lactose free). I substituted maifun rice noodles in place of vermicelli. I use coconut oil instead of butter, and low fat, low sodium chicken broth.
Regular zucchini bread recipe that has been modified to lower the fat and sugar content. It is very moist and tastes great!
A departure from standard pasta with tomato sauce- Neufchatel Cheese is used in place of cream cheese and the nutmeg and crushed red pepper flakes give it a unique flavor! A great new way to "eat your spinach"!
Ziti or Penne pasta can be used.
This recipe was originally "Rhubarb Crisp", given to me by my grandmother. It can also be used for cherries, apples, or even peaches. I have a mulberry tree in my yard and make this every spring. I have also lowered the sugar and fat content so it is a little healthier.
Low calorie, high protein and lots of flavor!
Use that leftover ham bone for flavor!
Sweet brown rice is a filling low-calorie treat!
