Goat Cheese Stuffed Jalapenos with Ranchero Sauce

Prepare the sauce up to 2 days ahead, and chill. Grill the jalapenos a day in advance, and refrigerate. Stuff and bake them just before serving. Very good but really spicy!

A customer at work gave me this recipe and I have to say it is delicious! Give it a try - we serve it with Asian Sesame Noodles (see my other recipe from Cooking Light) and Sesame Cucumber Salad (also from Cooking Light)

Kung Pao Shrimp from Cooking Light

For a spicier kick to the pungent glaze, leave the seeds in the chiles. Chinese black vinegar (we used balsamic as a substitute) will add a smoky taste.
