South Beach friendly
Made with red pepper instead of the traditional carrots. Freezes well.
This was adapted from an ABS Diet recipe.
Adapted from the Barefoot Contessa's recipe....
My son and I came up with this recipe when we were looking for a good energy bar to take on hikes and ski trips.
Very good served hot or cold. Try topping with 1-2 T of sour cream.
I also use "no-chicken broth" by Imagine instead of the vegetable broth when I can find it.
A good vegetarian side dish for the holidays. Wheat bread works just as good, if not better.
Make sure to chop the onions into large chunks, otherwise they will burn. This is also good if you add in cubed fingerling potatoes, but you will need to account for the extra calories.
