Backpackers that prefer our own gourmet creations rather than those instant, factory bagged meals available in the stores . . . so before a trip, we're preparing our favorite dishes to dehydrate. Lightweight once dried, we package in zip lock baggies and we're good to go. When dinner time rolls around at camp, we simply bring water to a boil, add our dehydrated food, rehydrate . . . and enjoy.
Better than takeout!
A hearty vegetable and sprouted bean soup for the crockpot. I use TruRoot Sprouted Bean Trio that I purchased from Costco.
Wanting fresh pita bread for dinner one night and tired of buying over-priced, drid out pitas at the store, I made my own. Stuffed with salad stuff and other low-calorie goodies, what a wonderful dinner!

A very pretty potato salad and easy to fix. With the sugar snap peas, it is so very refreshing to eat!
This trimmed-down version of lemon pudding still has a rich, creamy flavor because of the buttermilk and fresh squeezed lemon juice. Reduced sugar, less eggs, less flour and less buttermilk than the "regular" version of the recipe, it's not too bad on calories for a homemade version of tangy lemon pudding.
Garlic Scapes, the snipped off flower shoots of the garlic plant, available at farmers markets during the month of June make a wonderful pesto sauce. I love it served over fettuccine.
A wonderful combination of fresh flavors from the grilled vegetables combine with gorgongola cheese crumbles giving a new flavor to an old favorite - the omelet.
