This can be made slightly lower fat using lighter cheese- but it doesn't taste the same! Make the soup ahead and then just pop it in the oven with the toast and cheese when ready to eat.

These are fast, yummy and can be made ahead and even frozen. Time can be cut down if the veggies and cheese are purchased prepared. Use low fat cheese and home made BBQ sauce to cut fat and calories.

Potatoes thicken this soup. Very nutritious!
