you can make these as small or big as you like but of course the nutrition info will change.

you can use whatever color pepper you like. you can also make this recipe larger but the calories will be higher

chicken enchilada

serve w/ refried beans and a salad for a great meal. you can cook some mexican rice as well.

HC (Healthy Choice) spinach stuffed peppers

This would be good with a grilled meat and another small side. Sometimes I make macaroni and cheese.
(You can use any color peppers you like, even one of each)

blueberry pancakes

good on its own, but tou can also add sausage to make your own mc griddle

huevos rancheros

serves 1 but can double to any amout of servings you want. You can also use fat free or low fat sour cream I left it out
