VelvetSapphire's creamy mashed potatoes

My mother read this recipe in a column many years ago and we were delightfully surprised at how moist the egg makes the potatoes. The egg "cooks" in the hot potatoes as you mix it in. We always had all the family over on christmas eve (about 15) and my grandfather was always a picky eater and only ate one serving of whatever he ate ~ until he tasted these. Mom and I sat back in shock when he asked for more potatoes :) We always fixed one to one and a half potatoes for each person and changed other ingredients as needed. Be careful not to use too many eggs ~ mix one at a time until you get the consistency you want. The potatoes will have a light yellow look from the yolk but if you like, you can always remove the yolk first (but it does add a bit of protein). For 15 people, we used 2 medium eggs with a 5 lb bag of potatoes and made this for Thanksgiving and christmas each year ~ hope you enjoy.
