Vegan dish for lunch or dinner; This is a "clean the veggies out of the fridge before they go bad" kind of recipe - feel free to substitute whatever vegetables you have at hand!
Based on Emmjae's Low Fat Cheddar Chowder, but vegetarian and full fat cheese!
Tasty addition to rice, beans or veggies! We make a plate of 1/2 cup rice, 1/2 cup beans, and 1 cup cooked greens and put a serving of sauce over it. Simple and tasty!
This can be used as a pie filling, ice cream topping, or straight up as a snack (like apple sauce)
