You also need one small jalepeno but it wouldn't let me add it. The jalepeno needs the ends cut off and then sliced in half, then the seeds cut out and the inside veins scraped out. Throw seeds, skin and ends away and chop it up into very small pieces.
This is great with chips, or on a grilled burger or chicken breast - yummy! You can even put a be scoop on a bed of your favorite greens for a salad.
Trust me - it is great!
This dish can be cooked ahead and covered with foil and frozen for a quick Sunday dinner or a church potluck. It's a good dish to take to shut-ins also!
Simple - delicious - great for brunches or pot-lucks! Serve with a salad and crunchy bread for a complete meal.
Use egg substitutes, low fat cheese, etc. for more nutritional version.
Great salad - takes about 20 mins to prep - and then CHILL in fridge for an hour.
